Thailand: Green Mango and Clams Salad

Serves:   4         Preparation and cooking time: 25 min

Ingredients
10 clams
2 tbsp fish sauce
6 tbsp lime juice
2 tbsp red onion, finely chopped
1 cup green mango, finely shredded
3 tbsp toasted coconut shavings
1 tbsp palm sugar, mixed with a tsp of water
1 tbsp red chilli, minced or finely chopped

Method
Place the clams into a saucepan of boiling water until they are about to release, roughly 2 minutes. Place the clams in cold water and open them to separate the insides.

Place the clams into a mixing bowl and add two tablespoons of fish sauce. Add the lime juice, red onion, shredded mango, toasted coconut, palm sugar and chilli to the bowl and mix continuously.

Serve.

Note: You can use any source of protein to replace clams.
